Prepare all ingredients for the whole grain bread. Make sure all ingredients are at room temperature. If necessary, melt the butter so that it is liquid. Mix the dried yeast with the sugar and add the water. Stir this well with a whisk. Let this sit for a few minutes.
Mix the whole wheat flour with the seed and kernel mix, oatmeal flakes and salt in the bowl of the food processor. Place the bowl under the food processor with the dough hook. Mix everything together well. Pour the mixture with dried yeast, sugar and water into the wholemeal bread mixture. Add the (melted) butter. Let this knead well until a ball forms, then let it knead for another 5 minutes.
Remove the whole wheat bread dough from the bowl and place it on a floured work surface. Cover the dough with cling film and place a kitchen towel on top. Let the wholemeal bread dough rise in a draft-free warm place for 30 minutes. The dough will now increase in volume.
After 30 minutes of rising, squeeze the air out of the dough. Let it rise for another 30 minutes in a draft-free and warm place, covered with cling film and a kitchen towel on top.
After 2x 30 minutes of rising, shape the bread as desired. After the bread has formed into the desired shape, sprinkle some more seeds and kernel mix and / or oatmeal over the top of the bread. Place the cling film on the bread dough along with the kitchen towel. Let the bread rise in a draft-free warm place for 60 minutes. Again the bread will increase in volume.
Prepare the barbecue with an indirect zone at 220 gr. C. Place the pizza stone on the barbecue 10 to 15 minutes before the bread is baked so that it can warm up.
Remove the cling film and kitchen towel from the bread. Brush the bread with water before baking using a baking brush. This keeps the dough flexible and creates a crispy crust. Sprinkle the pizza stone with some corn flour, put the wholemeal bread dough on the warm pizza stone. Bake the bread in 35 to 40 minutes until golden brown.
