Ingrediënts Gyros
2800 grams pork shoulder
1 Gyros Marinade
1 Gyros Herbs
Gyros Marinade:
300 ml Olive oil
4 cloves of Garlic
3 tablespoons Vinegar
3 Green chilies
3 Onions
1 Lemon
1 tablespoon Thyme
Gyros Herbs:
30 grams of Sea salt
15 grams Paprika powder
12 grams of Garlic powder
12 grams of Ground cumin seeds
10 grams of Onion powder
8 grams Freshly ground black pepper
5 grams Oregano (dried)
4 grams Parsley (dried)
4 grams of Celery salt
2 grams of Thyme
Preparation
Prepare the ingredients for the gyros and gyrosmarinade. You can also mix all the herbs together.
Cut the onions and pepper into half rings and the garlic into pieces, then mix with the juice of one lemon, vinegar, thyme and olive oil to make the gyrosmarinade.
Cut the pork shoulder into even thin slices. Place the pork shoulder slices in the gyrosmarinade, press everything well, make sure the pork shoulder is well covered with the gyros marinade. Cover with cling film and let it marinate in the fridge overnight.
The next day, remove the pork shoulder from the gyrosmarinade. If necessary, keep a little of this marinade to spread it over the meat while grilling. Mix all the herbs for the gyrosherbs together in a mortar or coffee grinder. Sprinkle 30 grams of gyrosherbs in a container and rub the pork shoulder through it. Make sure all slices are covered with the herbs. Press the pork shoulder well and put it covered in the refrigerator. After a few hours, remove the pork shoulder from the refrigerator. Thread the meat on the spit of a rotisserie. Press the meat well. Make sure the pork shoulder is evenly distributed on the rotisserie and trim if necessary. Let it come to room temperature.
Prepare the barbecue at 150 gr. C. and hang the rotisserie in the barbecue. Grill the gyros evenly in about 2 hours to a core temperature of 72 – 74 gr. C. (If you still have gyrosmarinade withheld, you can rub the gyros with this marinade from time to time) and cut into nice pieces.
Serve the gyros in a freshly grilled pita bread.
