Ingrediënts Flank steak skewer with Javanese soy sauce
700 grams Flank steak
Javanese Soy Sauce

200 ml of Water
100 ml Sweet soy sauce Manis
30 ml Lime juice
30 ml Sunflower oil
15 grams of Palm sugar
12 grams of Sambel Oelek
10 grams of Cornflour
3 cloves of Garlic
1 Onion

Preparation
Prepare all ingredients for the Flank steak skewer with Javanese soy sauce. Let the Flank steak gently come to room temperature. Chop the garlic and onion very fine. Mortar the finely chopped garlic and onion in a mortar so that everything is soft. Add the Sambal Oelek and mortar it through the garlic and onion mixture until a smooth paste is formed.
Heat the sunflower oil in a pan, fry the paste of garlic, onion and Sambal Oelek. Then add water, sweet soy sauce Manis, lime juice and palm sugar to it, Bring the mixture to a boil while stirring.
Prepare the cornflour with 2 tablespoons of water and stir until a smooth paste forms. Pour this into the Javanese soy sauce so that the sauce thickens. Leave the sauce on a low heat to keep it warm.
Prepare the barbecue on the direct method at a temperature of 210 gr.C. Use a sear grate if possible, let it warm up with the barbecue from the start.
Sprinkle the Flank steak lightly with black pepper. Cut the Flank steak into even cubes. Thread the Flank steak cubes on satin pins. (If you use wooden satin sticks, soak them in water for at least 30 minutes)
Grill the Flank steak skewers all around on the sear grate until they have a nice golden brown color, with a core temperature of 54 gr.C.
Serve the Flank steak skewers with Javanese soy sauce on a nice plate or board. Pour some warm Javanese soy sauce over the Flank steak skewers. If wanted garnish them with spring onion rings. Serve the remaining Javanese soy sauce in a bowl.
