Ingrediënts Banana chocolate bread
450 grams Bananas
300 ml Sunflower oil
200 grams of Flour
200 grams Dark chocolate minimum 70%
200 grams Oatmeal flakes
200 grams Nut mix
120 ml Honey
50 grams Coconut grater
20 ml Lime juice
15 grams of Baking powder
Baking tin for bundt cake
Prepare all ingredients for the banana chocolate bread. Prepare the barbecue at 185 gr. C. with the indirect method.
Make sure all ingredients are at room temperature. In the meantime, roast the nut mix in a frying pan with a thick bottom. Let the nut mix cool down after roasting. Roughly break the dark chocolate. When cooled, coarsely chop the nut mix with a knife.
Add the coarse dark chocolate pieces together with the chopped nut mix, flour, oat flakes, honey, coconut grater and baking powder in a large spacious bowl. Pour the lime juice and mix everything well.
In another bowl, mash the bananas with a fork. Add the sunflower oil while stirring with a whisk. Mix this well together so that it becomes a whole.
Pour this mixture into the large bowl with the other mixed ingredients. Mix all this well again until a batter is formed.
Grease the baking tin for bundt cake with a little sunflower oil. Pour the banana chocolate bread batter into the baking tin for bundt cake.
Place the baking tin for bundt cake in the barbecue and bake the banana chocolate bread for 60 minutes until golden brown with the lid of the barbecue closed. After 60 minutes, check with a skewer whether the bread is done. When the banana chocolate bread is cooked and nicely golden brown, remove it from the barbecue, remove it immediately from the baking tin for bundt cake and then let it cool on a wire rack before cutting.
