Ingrediënts Asian flat iron skewers
1500 grams of Flat iron steak
130 ml Soy sauce
80 ml Sunflower oil
50 grams of Palm sugar
40 ml Sesame oil
20 grams of Sesame seeds
10 ml Soy sauce Manis
10 ml Rice vinegar
10 ml Fish sauce
9 grams of Garlic powder
4 grams Ground coriander
3 stems Spring onion
1 Onion
1 Red onion

Preparation
Prepare all ingredients for the Asian flat iron skewers. Make a marinade from soy sauce, sunflower oil, palm sugar, sesame oil, soy sauce Manis, rice vinegar, fish sauce, garlic powder, ground coriander and sesame seeds. Mix these ingredients together in a bowl, stir the marinade well with a whisk.
Cut the flat iron steak into even cubes of about 3 cm. Place these flat iron steak cubes in a bowl. Add the marinade, keep 100 ml of the marinade aside.
Peel the onion and the red onion and cut into large pieces. Add the sliced onions to the flat iron steak in the marinade. Make sure everything is well under the marinade. Cover the dish and let it marinate in the refrigerator for at least 3 hours. If possible, let it marinate in the refrigerator overnight.
After marinating, skewer the Asian flat iron steak together with the onions. Thread the onions and the flat iron cubes alternately on the skewers. (If you are using wooden skewers, soak them in water for at least 30 minutes) Let this come to room temperature slowly. Pour away the marinade.
Prepare the barbecue at 230 gr. C. with the direct and indirect zone. When the barbecue is at the right temperature, place the skewers above the indirect zone to a core temperature of 45 gr. C. Brush the skewers with a little of the reserved marinade.
Cut the spring onion into thin rings and keep these for garnish.
Then grill the skewers alternately above the direct zone to a core temperature of 52 gr. C. until they are a nice golden brown in color. Stay close to the grill so that the Asian flat iron skewers don’t burn.
Remove the flat iron skewers from the barbecue and brush them again with a little of the marinade. Sprinkle some sesame seeds on top. Let the skewers rest for 5 to 10 minutes.
Before serving, sprinkle the spring onion rings over the Asian flat iron skewers.
